Spice Up Your Life With Salsa

This post is going to be short and sweet. I'm all about salsa. It's like an obsession for me. It's pretty bad. I have two weaknesses in life. Chocolate and salsa. So, if you want to bribe me at anytime, you know have the power to get me to back you on pretty much any subject.

In this photo above I have a few items I like to keep on hand. Red salsa, Green salsa, and whole roasted Hatch chili's. In this post I'm going to give you my red salsa recipe. This one has evolved out of a recipe a friend gave me years ago and a few of my own additions along the way. It doesn't stay around too long in my household when I make it because we use it on tacos, omelettes, breakfast burritos, and just for snacking with chips.

 

Jen's Salsa

3 cloves of garlic

1 large yellow onion

1/2 bunch of fresh cilantro

2-3 medium cans of tomatoes and peppers

1 Bell pepper

1 chopped jalapeno (optional)

1-2 Hatch roasted chili's (optional)

Salt to taste

Place all items in the blender and blend. Add optional items if you want the salsa more spicy. I can this salsa periodically or you can it keep it in the fridge for about a week or 10 days. This makes almost two large jars of salsa. When I can this, I normally make about 3 recipes and that lasts us for about 2-3 months.
