Healing Crockpot Chicken Noodle

There's something about a cold rainy day that makes me want to curl up and go to sleep. Who wants to cook when you could take a nap and listen to the rain? Well, That was me today. When someone in the house is sick or if it's just one of those days you're seeking comfort food, this is an easy recipe.

What makes this a great recipe is that you can't mess it up. Seriously. You can't. So if you want to try your hand at an easy meal, this is for you. Don't freak-out when I don't give you exact amounts because remember you can't screw it up if you follow my directions. Okay? Good. Let's move on.

I have made this recipe with homemade egg noodles. If you want to try it, it's fun and just be aware that homemade egg noodles get very thick so you need to roll them out very thin. I didn't do that today. If I don't make my egg noddles I buy either higher quality egg noodles on the pasta isle or the frozen ones. Either work fine. Again, you can't mess this up.

 

Healing Crockpot Chicken Noodle

Chopped carrots (equal amounts of each vegetable)

Chopped onion

Chopped celery

1 cube butter

Dried or fresh parsley

2 chicken breasts chopped in small cubes

salt and pepper

2 Bay leafs

water and chicken bouillon or chicken broth (your preference)

1 bag of egg noodles (dry, frozen, or homemade)

I spray my crockpot with nonstick spray and add the vegetables, butter, parsley, Bay leaf, chicken and salt & pepper. Then I add the liquid. I add about twice the amount as the items in the pot. So if your pot is filled three inches high, I put in six inches of liquid in from the bottom of the crockpot. I cook this on low for 4 hours to cook the chicken and vegetables through.

After 4 hours, I pull out the Bay leafs and add the noodles. If the noodles aren't covered in liquid when you put them in, then add more water or broth. Taste the broth. Add more salt if needed. Cook for about an hour and let sit on the warm setting till ready to eat. (If your noodles are frozen they will take an extra half hour or more to cook.)

This can make enough to feed 10-12 servings.
